I’ve never been a fan of pork chops.
My husband is, so every month or so since we’ve been married I have tried to find a recipe that would make them yummy for him, and palatable for me.
No luck…
…until about a month ago when I found this gem: Parmesan-Crusted Pork Chops!
Try them– they’ll change how you think about “the other white meat!”
2 large eggs
1 cup dried Italian-style bread crumbs
3/4 cups freshly grated Parmesan— Very Important. Don’t do it if all you have is Kraft’s chemical version in the green can)
4 (1/2 to 3/4-inch thick) center-cut pork loin chops
Salt and freshly ground black pepper
6 tablespoons olive oil
Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops– I do 2 at a time– and cook until golden brown about 6 minutes per side. (Center reaches 150 degrees).
